First, peel and cut the sweet potatoes into thick strips. I used two small baking pans and lined them with tinfoil. I then sprayed the pans with olive oil and sprayed the top of the potatoes also. Sprinkle the potatoes with black pepper and celtic sea salt.
You can also use a non-stick baking pan as I did here to cook parsnip fries. These are also delicious and prepared the same way with olive oil spray, pepper and celtic sea salt.
Preheat oven to 350 - 400 depending on your oven and how crispy you like your fries.

Cutting them into smaller squares makes them crispier.
